Abstract. The article contains a brief description of the developed rapid test for determining the presence of antioxidants in butter (of animal origin without substitutes for fat-and-oil product (WSFOP)), which allows governing authorities to significantly reduce the number of samples taken for in-depth laboratory analysis.
