Antioxidants as a food safety criterion

The article discusses the role of antioxidants in ensuring food safety, methods for determining antioxidants and their activity.
It is emphasized that the working means of measuring antioxidant activity are an integral part of the infrastructure of measurement technologies in biology, medicine, and food production.
The basic concepts, terms and definitions in the study of the antioxidant properties of sub-stances and biomaterials are given.
The question of the need for rationing an indicator of antioxidant activity, the effect of antioxidant substances on human health is discussed.
A separate section of the article is devoted to the criteria for food safety.
A list of antioxidants permitted in the Russian Federation.
