Annotation. The article is devoted to the development and use of methods for assessing the quality of food products. The State standards for these methods, developed at FSUE “VNIIFTRI”, are listed. The reference base in the field of food quality analysis is covered. The most frequently and effectively used state and working standards are listed, which are possessed by FSUE “VNIIFTRI” in this area.
